In the Kitchen With Joe: ‘Kiko’s Cantina’
GRAND ISLAND, Neb. (KSNB) - If you watch the chefs cook at Kiko’s Cantina in Grand Island, you’d think the restaurant has been open for quite some time.
However, the restaurant has only been open a few weeks.
Owned by Francisco and Vanessa Garcia, Kiko’s has already made a name for itself by serving up authentic Mexican cuisine, that takes recipes from the Garcia’s’ hometown of Jalisco, Mexico, as well as other regions of the country.
“A lot of our recipes come from our own hometown, but we have a lot of different plates from different regions,” said Francisco. “From Mexico City, Oaxaca, and Michoacán, we’ve tied in a lot of different flavors together.”
Another big selling point for the restaurant is the beautiful atmosphere, with murals and decorative chandeliers hanging above patrons heads.

“We brought most of our furniture and lighting from Mexico,” explained Vanessa. “We hired an artist out of Omaha to come and paint the murals.
“I think people like how it all ties in with the vibrant colors, and it just makes the place stand out a lot,” continued Francisco.
With good food and a terrific atmosphere, Kiko’s has been bringing in the customers left and right.
“We’ve seen a lot of customers from our other establishments come in and check it out. We’ve seen a lot of new faces. I think it’s been great overall,” said Francisco.
